BREAD AND CHEESE



So simple a lunch or snack with such gratification the crunch of slightly toasted French bread the soft creaminess of good goat cheese. Simple and filling. And we cannot forget the Mediterranean olives with their explosive flavor my wife’s favorite and another reason not to forget.


You see, bread and cheese both are very old. Bread going back some 30,000 years before Christ and cheese going back to 8000 years before Christ according to Wikipedia that is. What I am getting at is that we have had some time to get good at making them. So when you bite in to a good piece of toast and cheese you are biting in to thousands of years of practiced precisions. What was first a way of preserving food a necessity for survival has now evolved in to staples of our civilization. We don’t need to preserve milk for a hike through the desert or store grain for months on end. Without the constant fear of something we are left with room and time to prefect on our predecessor’s ingenuous creations.  


Food like life is for enjoyment each bite filed with new tastes and textures. There are hundreds of breads to combine with millions of cheeses. Some people dedicate their lives to the pursuit of delicious food. This is it right here and I want some! I want to bite in to a master baker’s bread covered with the creamiest Brea cheese right from the artisan cheese maker. Tasting it loving it and inevitably wanting more of it.
